Nolita is New Zealand's first plant-based pizza & pastaria on Wellington's buzzing Cuba St. We do things a little differently with 48 hour fermented sourdough, house-made cheese, pasta & flatbreads. Opening mornings from 7.30am on 1 Dec 2025!

Our vision was to create plant-based food that is just as tasty (if not more)! We're passionate about our sourdough bases and plant-based mozzarella. Our dough is freshly made each day using a sourdough starter, type 2 flour and fermented for 48 hours, before being hand-stretched and served; enhancing its digestibility and flavour. Our fresh house-made cashew mozzarella is delicately fermented using dairy-free culture. 

We are now open for your morning coffee fix! From 7.30 weekdays, and 8.30 on weekends. Dance in for a free coffee!
